We visited the El Azteca in Apple Valley, Minnesota. And this is my review.

My impressions
The location is off county road 42 and east of Cedar Ave. Open from 11am to 10pm on Monday to Thursday. Open 11am to 11pm on Friday and Saturday. And 11am to 9pm on Sunday. They have happy hour from 3-5pm daily and have a cute Caribbean-like bar. They are always friendly as you arrive. Every time I have been there for dinner and lunch the service has been fast and friendly. And the food is always served hot. But beware the plates can be very hot!

Here is our selections and impressions. But everything comes with wonderful chips and their salsa is great! You might consider upgrading to cheese dip with your chips…good stuff!
Burrito Fajita
You can have it filled with chicken or steak. I picked steak (always do). It was tender and had nice flavor. Came with sautéed onions, crema salad toppled with nacho cheese and either rice or beans.
All the menu choices are generous in size.
Recommended?
Yes, and I have been there many times. And will return many times more. The service is always friendly and fast. Every time the food is warm/hot. And I’m thanked when I leave. All at affordable prices. What more can you ask for?
